Citric Acid

Citric Acid is a weak organic acid and a natural preservative used to add an acidic or sour taste to foods and soft drinks. It is a white crystalline powder that exist either in an anhydrous (water – free) form or as a monohydrate.

Citric acid exists in a greater than trace amounts in variety of fruits and vegetables most notably citrus fruits.
It finds application in the following areas.

  • As a food additive for flavouring and as a preservative
  • As an ingredient in making soaps and laundry detergents due to its ability to chelate metals.
  • Used in wine production as a substitute or improver where containing little or no natural acidity fruits is used.
  • As a PH regulator of normally basic dyes in food colourings
  • As an active ingredient in the production of anti viral tissues
  • Added to ice creams to keep fat globules separate and added to recipes in place of fresh lemon juice as well.
